What's for Lunch?

I'm up early today. My plan  - "ME" time. Pure bliss! One tick off my agenda for this day is to cook early so I could leave early. At 6:30am, I am busy at the kitchen preparing lunch - Pakbet - for hubby and people here at home. How I love this dish. I'm partial to salty food, hence the love for this. I just so love the fact that hubby and I were able to vegetables for this dish at the weekend market here at our village clubhouse yesterday. Very seldom do I find the veggies I need - round eggplants, baby ampalaya, baby sitaw (is there such a thing? our househelp calls it AYAP), and bunga ng malunggay (not the leaves). Oh, btw, we were surprised to find out that a kilo of cauliflower was for only 50pesos and a kilo of broccoli for 60pesos. Of course, I bought a kilo of each. This week's gonna be a "veggie week" for us. Healthy!

Let me share my simple version of the Pakbet we all love here at home.

pork belly
garlic
onions
tomatoes
ginger
bagoong na isda
baby sitaw
baby ampalaya
bunga ng malunggay
round eggplants

1. Saute garlic, onion, ginger, tomatoes.
2. Add in pork belly. I wait for it to turn into golden brown.
3. Add water and half of the bagoong isda. Bring to boil.
4. Add in vegetables. I do it in order - bunga ng malunggay, ampalaya, talong, and sitaw.
5. Boil. Check if veggies are okay. Taste. Done!
